Minty Lamb Kebabs

Ingredients

150ml pot natural yogurt

1 1/2 tbsp mint sauce

1 tsp ground cumin

300g diced lean lamb leg boneless

1/2 small onion, cut into chunks

1/2 small coloured pepper cut into chunks

2 large pitta breads

2 handfuls of lettuce and some chopped coriander

Wooden or Metal Skewers

Method

1.   Mix the yogurt and mint sauce together, then divide the mixture in half.  Stir the cumin into one half of the yogurt mix and pour over the diced lamb. Mix thoroughly to coat and season well.  

2. Heat the barbeque or a grill while threading the lamb onto 4 skewers, alternating with pieces of onion and coloured pepper. Cook for 3-4 minutes on each side, until the lamb is cooked through and the vegetables beginning to brown.

3. Warm the pittas in a toaster and split open.  Stuff the pittas with lamb, vegetables, lettuce, coriander and drizzle with the rest of the minty yogurt to serve
